Young Dutch Cauliflower Chickpea Tacos

Ingredients:
Willicroft Young Dutch
8 small tacos⁣
1 cauliflower
1 tin of chickpeas
4 tbsp smoked paprika
salt & pepper⁣
A drizzle of tabasco sriracha
2 tbsp (vegan) mayonnaise

Directions:
Preheat the oven to 200 degrees and line a baking sheet with parchment paper.⁣

Cut the cauliflower into pieces, drizzle with olive oil, and sprinkle it with smoked paprika powder, salt and pepper. Mix until well combined and bake in the oven on the baking sheet for around 15 minutes at 130 degrees.

Whilst the cauliflower is roasting you can make the taco sauce. Stir the mixture of sriracha and mayonnaise until it gets a nice and even colour.

Add the chickpeas to the cauliflower tray, drizzle with olive oil, sprinkle with smoked paprika powder, salt and pepper, and return to the oven for 10 minutes.

Fill the tacos with sauce, stuff them with the cauli and chickpeas and top it off with Willicroft Young Dutch!
