Olive Gnocchi and Italian Aged

Ingredients: 

200 gr gnocchi

250 ml tomato sauce

50 ml vegan cream

2 sweet red bell peppers

75 gr black olives

1 tbsp vegan red pesto

1 clove of garlic 

2 tbsp olive oil 

salt & pepper 

fresh basil

50 gr Italian Aged


Instructions: 

1. Chop up the shallot and dice the red peppers. Cut the olives in half.

2. Add olive oil to a pan and fry the shallot. Cook until soft, than add the bell pepper and olives. Cook for another 3 minutes.

3. Add the pesto, vegan cream, garlic, salt and pepper to taste, some fresh basil and ⅓ of the tomato sauce. Stir until well combined.

5. Add the rest of the tomato sauce and the gnocchi and stir again. 

6. Serve the gnocchi with some extra basil on top together with the Italian Aged. Enjoy!
