Greek White Rucola Salad with Walnuts and Pomegranate

Our Greek White rucola salad with walnuts and pomegranate seeds turned into an instant office favorite: Quick and easy to prepare and a perfect meal to bring to potluck style dinners!

Ingredients:

Greek White 

Walnuts

Rucola

Pomegranate seeds

Red onion 

1/4 cucumber sliced 

1 spring onion 

Bell pepper 

Dressing:

Salt 

Pepper

Oregano

1/2 clove of garlic (squeezed) 

1tbsp Lemon juice (squeezed)

Extra virgin olive oil 

Balsamic vinegar 

1. Prepare the Dressing:

In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. 

If desired, add a pinch of vegan honey or agave juice. Adjust the seasoning to taste.

2. Prepare the Salad:

In a large bowl, combine fresh rucola, with diced paprika, cucumber, red onion, and spring onions. Add crumbled walnuts and pomegranate seeds. Toss gently to combine.

3. Add Greek White:

Crumble Greek White over the salad mixture. The creamy and tangy flavor of feta cheese complements the peppery taste of rucola and the sweetness of pomegranate seeds.

4. Drizzle with Dressing:

Pour the prepared Greek dressing over the salad and toss until all ingredients are evenly coated.

5. Garnish and Serve:

Optionally, sprinkle some additional dried oregano over the salad for extra flavor and garnish with a few more pomegranate seeds for a pop of color.

6. Enjoy!

For a complete meal, simply add grilled tempeh, tofu or paprika spiced chickpeas to the mix.
