Tomato and Original Sauce pasta

Ingredients: 

200 gr linguine 

2 mid sized eggplants 

135 gr Willicroft Original Sauce

400 ml tomato sauce 

handfull cherry tomatoes 

10 leaves of basil 

1 clove of garlic 

2 tbsp olive oil 

salt & pepper 

optional: Italian Aged for garnish


Instructions: 

1. Bring a pan with water to a boil and cook the linguine following the instructions on the package. 

2. Chop up the shallot and dice the eggplant. Cut the tomatoes in half. 

3. Heat the olive oil in a pan and fry the shallot. Add the eggplant and cook for 5 minutes. 4. Add the cheese sauce, tomato sauce, basil, garlic and a dash of salt and pepper to taste. Mix well, lower the heat and put the lid on. Cook for 10-15 minutes. 

5. When done, add the tomatoes and mix. 

6. Serve the sauce with the pasta and garnish with some Italian Aged.
