Sweet Potato and Black Beans Tacos with Greek White

Ingredients (2 pers): 

4 small tacos

1 sweet potato 

150 gr black beans

100 gr corn

4 tbsp tomato sauce

1 tsp chilli powder

1 tsp cumin

salt & pepper 

2 tbsp olive oil

fresh parsley

Greek White


Instructions: 

1. Preheat the oven to 200 degrees and line a baking sheet with parchment paper.

2. Dice the sweet potato and add to the baking sheet together with the olive oil, salt and pepper to taste and the chilli powder. Mix until well combined and bake in the oven until the potatoes are soft, around 15 mins.

3. Drain the beans and cook them in a pan until warm and soft, add 1 tsp cumin, corn and crumble in the Greek White.

4. Add the tomato sauce to the tortillas, together with the sweet potatoes, beans, corn, Greek White and fresh parsley.
